This recipe transforms beef heart into a juicy, flavorful dish that you can serve as pulled beef. By slow cooking and then briefly roasting, it develops an intense flavor and a delicious texture. Perfect for tacos, sandwiches, or as a topping on a salad!
Ingredients (for 4-6 people):
(If you use 500 grams of heart, simply halve all quantities)
For the meat:

1 kg beef heart
-
2 tbsp butter, ghee, lard, or tallow
-
1 onion, coarsely chopped
-
4 garlic cloves, crushed
-
1 tsp cumin powder
-
1 tsp smoked paprika powder
-
1 tsp oregano
-
½ tsp cinnamon
-
½ tsp allspice powder
-
1 tsp salt
-
½ tsp black pepper
-
1 tbsp apple cider vinegar
-
500 ml homemade chicken or beef broth
-
2 tbsp tomato paste
-
2 tbsp honey or date syrup
-
1 tbsp Worcestershire sauce
For finishing:
-
1 tbsp butter, ghee, lard, or tallow

Juice of 1 lime
-
Fresh coriander or parsley (optional)
Preparation:
1. Preparing the beef heart
-
Cut the heart into large pieces of about 5-7 cm. This helps with cooking and makes it easier to "pull" later.
2. Marinating and searing (optional: you can also just throw everything in one pot and skip this step)

Mix cumin, smoked paprika, oregano, cinnamon, allspice, salt, and pepper in a bowl. Rub the beef heart with this.

Heat olive oil in a roasting pan and sear the pieces of beef heart on all sides until golden brown. Remove the meat from the pan.
3. Simmering in flavorful broth

In the same pan: sauté the onion and garlic until soft.

Add the tomato paste and sauté briefly.

Deglaze with apple cider vinegar and Worcestershire sauce.

Pour in the broth and add honey.

Return the beef heart to the pan and bring to a boil.
4. Slow cooking

Turn the heat down and let it Simmer for 3.5 to 4 hours with the lid on the pan or in a slow cooker!

The meat is ready when it is very tender and falls apart easily.
5. Pulled effect & crispy finish

Remove the meat from the pan and pull it apart with two forks. & Enjoy!
Optional:

Heat a frying pan with a little butter or olive oil.

Sear the pulled beef heart briefly so some pieces become crispy.

Drizzle with lime juice and optionally some fresh herbs.
Serving ideas:

Tacos: Fill corn tortillas with pulled beef heart, guacamole, red onion, and fresh coriander.

Sandwich: Make a sourdough bun with pulled heart, coleslaw, and a spicy barbecue sauce.
