π₯£ Healthy Mayonnaise with Raw Butter & Olive Oil
π₯Β Ingredients

1 fresh egg (room temperature)

1 extra egg yolkΒ (optional, for extra creaminess)

50 g (raw) butter, ghee or tallowΒ (soft)
-
100 ml cold-pressed extra virgin organic olive oil

2 teaspoons raw apple cider vinegarΒ (or to taste)

Pinch of sea salt
π³ Preparation method
1οΈβ£ Preparation
Make sureΒ all ingredients are at room temperatureΒ , especially the egg and the butter.
This prevents curdling and ensures a smooth emulsion.
2οΈβ£ Mixing
Put the eggs, the apple cider vinegar and the sea salt in a tall measuring cup or bowl.
3οΈβ£ Adding butter
Add the soft butter, ghee or tallow.
Note:Β not melted, only soft.
4οΈβ£ Blending
Use an immersion blenderΒ (or food processor) to mix the mixture.
Slowly pour in the olive oil while continuing to blend.
Within a few minutes it binds into aΒ creamy, thick mayonnaise.
5οΈβ£ Finishing
Taste and add extra vinegar or salt to taste.
