🥣 Healthy Mayonnaise with Raw Butter & Olive Oil
🥚 Ingredients

1 fresh egg (room temperature)

1 extra egg yolk (optional, for extra creaminess)

50 g (raw) butter, ghee or tallow (soft)

100 ml cold-pressed extra virgin organic olive oil

2 teaspoons raw apple cider vinegar (or to taste)

Pinch of sea salt
🍳 Preparation method
1️⃣ Preparation
Make sure all ingredients are at room temperature , especially the egg and the butter.
This prevents curdling and ensures a smooth emulsion.
2️⃣ Mixing
Put the eggs, the apple cider vinegar and the sea salt in a tall measuring cup or bowl.
3️⃣ Adding butter
Add the soft butter, ghee or tallow.
Note: not melted, only soft.
4️⃣ Blending
Use an immersion blender (or food processor) to mix the mixture.
Slowly pour in the olive oil while continuing to blend.
Within a few minutes it binds into a creamy, thick mayonnaise.
5️⃣ Finishing
Taste and add extra vinegar or salt to taste.
